Brue Valley Farms belong to Farmhouse Cheesemakers Limited, a farmers’ co-operative. All members have been awarded the coveted Protected Designation of Origin (PDO).
This accreditation lays down strict criteria intended to protect the heritage and tradition of specific foods from their imitation elsewhere in the E.U. It requires all milk used for the production of West Country Farmhouse Cheddar to come from the four counties of Somerset, Devon, Dorset and Cornwall. The cheese must be made on the farm by hand, using authenticated methods and local milk. Besides the ingredients and the recipe, cheesemakers must adhere to hygiene standards set out in various statutes: Food Safety Act, Food Safety Regulations, Dairy Products Regulations and Food Labelling Regulations. All grading must be carried out by an experienced, independent cheese grader.
