Discover our traditional methods for producing exceptional butter
At Brue Valley we pride ourselves on using methods passed down from our generations to create our wonderful Butter. Whilst many dairies have turned to more modern methods, for us the beauty of our product is in the batch churning in our 1960’s butter barrels & hand salting: thus creating a truly artisan butter.
Working with a variety of cream from all over the UK including Whey, Sweet, Organic & Goats from a pool of trusted suppliers, we are firm believers you must use quality ingredients into a product to get the best results.
Salts are another important addition to our product. We work with customers to understand what they want from the product and use a wide range of quality salts; these deliver the bespoke profile the customer is looking for be it crunch, texture and or depth of flavour. As we churn small batches this allows us the flexibility to create bespoke products for our customers.

Introducing our most recent product.
Artisan butter, blocks, rolls and portions, organic, goats, pastry and flavours
Traditionally, our Butter came in a roll format patted with wooden panels. Cream was sourced as a byproduct of producing Farmhouse Cheddar Cheese. This is known as Whey Cream which has great character & changes in depth of colour depending on the time of year; something for a real foodie. Sweet Cream is now more commonly used, this is a wonderful smooth product which is consistent in quality & character; this is Cream made from milk. Alongside these, Organic & Goat cream add more interest to Brue Valleys portfolio.
Moving from the traditional hand roll, which is still much loved & now comes in a variety of sizes, Brue Valley also produce both a 250g & 125g brick; 100% recyclable portions, pastry Butter, flavours (which can be bespoked) & a range of larger catering size formats. Our processes involve expertise from our trusted team who share the passion the family have for the importance of maintaining traditional methods & quality.
Brue Valley specialise in long term partnerships & testing the boundaries of our proficiency to create the very best Artisan Butter. As the saying on the farm goes, Butter has no bounds!
Our cows lead a life of indulgence to produce deliciously creamy milk
In the shadow of Glastonbury Tor there is a hum of activity created by Brue Valley.
Our cows are cared for by Rob & his dedicated team. We are firm believers that our cows must be relaxed and happy to make quality milk, which then allows us to make quality mozzarella.
Being on the lowlying Somerset Levels we grow masses of lush grass which we balance for the winter months with maize & silage to keep our ‘girls’ happy.
